About Us
Our Story
Agave Bandido was fifteen years in the making. Founder Mathew Baum grew up in Southwest Florida, where Latin culture and hospitality are everyday life, and knew early on that he wanted to build places that made people happy.
At the University of Kentucky, between soccer seasons, he wrote a business plan for a restaurant he called Gringo's: bold Mexican food, handcrafted cocktails, and a room full of energy. The idea never left him.
He ran franchise restaurants, then opened a speakeasy, sharpening the same thing all along: high-energy rooms and nights people remember. When a corner spot in Pembroke Pines came up, that college business plan finally became Agave Bandido.
He partnered with Matthew Faul, whose restaurant and cocktail experience shaped what it is today: bold flavors, premium no-filler cocktails, and genuine hospitality. A table for two on a Tuesday or a room for forty on a Saturday, we set it the same way.
